I've just configured a new 250 quad with LibrePilot using the wizard and the generic quad settings however whilst the quad flys really stable if I so much as touch the pitch control it goes almost to a 45-degree angle quite aggressively there is no gradual movement at all. I'm assuming there is something in the setup I can adjust but would appreciate any input on this issue.

It sounds like you did not move the pitch stick to max in both directions when you ran the wizard.
I suggest you run the Start Transmitter Setup Wizard on the Input page.
