Hello, is there a way in LibrePilot to set a switch that will arm the quad and begin running the motors? I'm using a Flysky fs-i6 is that helps. Thanks!

Yes,
Input tab > Arming Settings and select Accessory0 for example.
Assuming the Accessory refers to the PWM - Input 6, you assigned a switch to one receiver output and is calibrated like others channels.
Be sure the Accessory's neutral is set to middle range.
